In the Mindful Kitchen, every recipe invites you to slow down and savor the process. We believe cooking is more than just preparing food—it’s a chance to be present, to create joy, and to nourish both body and soul.
This month, we’re sharing two comforting classics by Maham Ali—a dedicated doctor by profession, a passionate baker by heart, and a true food enthusiast. Let her recipes add a touch of homemade comfort to your day and wrap your table in warmth.

Ingredients:
200 g dark chocolate (chopped)
½ cup unsalted butter
¾ cup granulated sugar
½ cup brown sugar
3 medium eggs
Pinch of salt
1 tsp vanilla essence
½ cup all-purpose flour
¼ cup cocoa powder
Method:
- Preheat your oven to 350℉ (180℃). Line a 7×7-inch baking pan with parchment paper.
- In a heatproof bowl, melt the butter and chocolate together using a double boiler or microwave. Stir until smooth and glossy.
- In a separate bowl, whisk the eggs and both sugars until light and creamy.
- Add the vanilla essence and the melted chocolate-butter mixture. Mix well until fully combined.
- Sift in the flour and cocoa powder. Gently fold into the batter using a spatula, being careful not to overmix.
- Pour the batter into the prepared pan and spread evenly.
- Bake for about 30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let the brownies cool in the pan for at least 15 minutes before slicing into 9 squares.
- Enjoy your warm, rich, and fudgy brownies!
