In the Mindful Kitchen, every recipe invites you to slow down and savor the process. We believe cooking is more than just preparing food—it’s a chance to be present, to create joy, and to nourish both body and soul.
This month, we’re sharing two comforting classics by Maham Ali—a dedicated doctor by profession, a passionate baker by heart, and a true food enthusiast. Let her recipes add a touch of homemade comfort to your day and wrap your table in warmth.

Ingredients:
2 eggs
1 ½ cups milk
2 tbsp caster sugar
1 cup all-purpose flour
3 tbsp unsalted butter, melted
1 tsp vanilla essence
Pinch of salt
Method:
1. In a large mixing bowl, whisk together the eggs, milk, vanilla essence, and salt until well combined.
2. Add the flour and melted butter. Whisk vigorously until the batter is smooth and lump-free.
3. Heat a lightly oiled nonstick pan over medium-high heat.
4. Pour about ¼ cup of batter into the pan and swirl to coat the surface evenly.
5. Cook for 1–2 minutes, or until the top is set and the bottom is lightly golden. Gently loosen the edges with a spatula, flip, and cook the other side until golden.
6. Serve warm with your favorite chocolate spread and sliced bananas. Fold, top, and enjoy!
