Chicken Tikka Paratha Roll – A flaky, spiced paratha roll with juicy chicken tikka and flavorful chutneys—a perfect fusion snack or meal.
Chicken Tikka
Ingredients:
• 1 lb chicken tenders, cut into 1–2” cubes
• 4 tbsp plain yogurt
• 2 tbsp lemon juice
• 1 tbsp olive oil
• 2 tsp ginger & garlic paste
• 1–1.5 tsp salt
• 1 tsp cumin powder
• 1 tsp coriander powder
• 1–2 tsp chili powder (or cayenne)
• ½ tsp chaat masala
• ¼ tsp garam masala
• ¼ tsp turmeric powder
• Optional: ¼ tsp orange food color

Method:
1. Toss chicken with all ingredients; marinate for at least 1 hour.
2. Preheat oven on broiler setting; position rack on top shelf.
3. Thread chicken onto skewers (soak wooden skewers first). Broil ~6” from heat for 7–8 min per side until charred.
4. Let rest 5 min, then chop roughly and toss in juices.
Yogurt Mayo Sauce
Ingredients:
• ½ cup plain yogurt
• ¼ cup mayonnaise
• ½ tsp garlic powder
• ½ tsp cayenne or red chili powder
• ½ tsp paprika
Method:
Mix all ingredients until smooth.
Green Chutney
Ingredients:
• 1 cup cilantro
• ½ cup mint leaves
• 1 tsp cumin seeds
• 1–2 green chilies (serrano preferred)
• 2 garlic cloves
• ¼ tsp salt
• ¼ cup yogurt
• 2–4 tbsp water, as needed
Method:
Blend all ingredients into a smooth paste, adjusting water for consistency.
Assembly:
1. Cook 6 frozen parathas per package instructions until golden and flaky.
2. Spread yogurt mayo sauce on each paratha.
3. Layer chicken tikka along the middle, then top with thinly sliced onions.
4. Drizzle with green and tamarind chutneys, and sprinkle chopped cilantro.
5. Roll parathas tightly; air fry at 325°F for 3–4 minutes for extra crispiness.
6. Serve immediately and enjoy!
